Crumb Cake
Dry ingredients: 2 eggs
����� 4 cups flour 1 cup sour milk
����� 2 cups sugar 1 ts. baking soda
����� 1 cup butter or margarine
pinch cream of tartar
Mix flour and sugar; cut in butter as for   pastry.� Save about 2 c. for   topping.� Beat eggs; mix in remaining   ingredients.� Add crumb mixture;   beat.� Pour into greased 9" x   13" pan.� Put reserved topping on   top, in �" chunks.� Bake at 350� for 30 minutes.
Note:� To make sour milk, add milk to 1 Tbs.   vinegar to make 1 cup.�� Let stand a   few minutes.
Hamburger Casserole
1 lb. ground beef 1 Tbs. liquid smoke
2 - 31 oz. cans pork & beans 3 Tbs. white vinegar
1 - 16 oz. can kidney beans, drained
1 c. catsup
1 - 16 oz. can cannellini, drained
dash of pepper
� c. brown sugar���������
1 ts. salt
Brown 1 lb. ground beef; pour off fat; put   beef into crockpot.� Cook � lb. bacon,   1 c. chopped onion; drain; add to beef with remaining ingredients.� Cover; cook on low for 5-9 hrs. or on high   for 3 hrs.
Codfish Cakes
1 lb. dried codfish - soak in cold   water 12 hours; simmer 20 mins.
OR
1 lb. fresh or frozen cod - simmer   for 20 minutes.
About 3-4 lb. potatoes.� Either cook whole, peel, and mash.
OR peel, slice, cook, drain well,   and mash.
Note:�   mashed potatoes should be fairly stiff.
Codfish cakes:� Mix mashed potatoes, fish (cooked,   drained, and flaked), 2 or 3 eggs, pepper, 1 ts. grated onion   (optional).� Shape into balls;   flatten; roll in flour; saut� in butter and oil.� (or bake at 375� for 35 minutes)� Serve with tomato sauce and mayo sauce.
Tomato sauce:� Heat a 2 lb. can Italian tomatoes,   oregano, basil, parsley, 1 ts. sugar (optional).� Add some toast cubes.�   Thicken with about 2 Tbs. cornstarch mixed with 2 Tbs. water.
Mayonnaise sauce:� Mix together � c. mayonnaise, 1� ts.   mustard, � ts. Worcestershire sauce, 1/8 ts. Tabasco (hot sauce).
X-Mas Cookies
1 cup margerine
2 cups sugar (bay be part brown)
3 eggs
2 teaspoons baking powder
3 tablespoons milk
5 cups of flour
Mix everything together in a big bowl.
Chill at least 1 hour.
Roll; Cut out; Put on greased cookie sheet.
Bake at 375 for 8-10 minutes.
Apple Dumplings
5 baking apples (e.g. Granny Smith)
dough for 2 pie crusts (e.g. pie crust mix)
1.2 cup brown sugar
1 cup water
1 teaspoon cinnamon
1/4 cup granulated sugar
Mix brown sugar and water in a 9" square pan.
Mix cinnamon and sugar.
Core and peel apples.
Divide dough into 5 pieces. Roll each piece into a 6-7" square.
Place an apple in the center of each square.
Pour cinnamon mixture into core of apple.
Bring corners of dough up and over apple to cover completely .
Rub a little water on the dough to make it stick.
Place apples in pan with sugar water. Bake at 425 for 40 minutes.
